
Vegan kings brioche

January is the time for good resolutions. After the feasts and other Christmas Eve meals, it's time for Epiphany and its delicious feast. vegan king's brioche. Despite good resolutions, there's no question of missing out on this gourmet moment. So, to delight your taste buds, we offer you a recipe that will please everyone. Like a Provençal brioche, our version of vegan king's brioche is soft, flavored with orange blossom water and delicious with its candied fruits.
To prepare the brioche dough, you will need the following ingredients:
- 25 cl of soy milk or other vegetable milk
- 20 g of fresh baker's yeast
- 380 g of oatmeal flour
- 60 g caster sugar
- 5 g of fine salt
- A few zests of lemon and orange
- 70 ml of rapeseed, peanut or grape seed oil
- 40 ml of orange blossom aroma
To make the gilding and the topping, you will need:
- 10 ml of agave syrup
- 20 ml of vegetable cream
- 2 tablespoons of orange or apricot jam
Preparation :
Prepare the dough the day before.
1- Reduce the fresh baker's yeast in a bowl and pour the lukewarm milk over it. Let it sit for 15 minutes.
2- Mix the flour, sugar and salt in a large bowl
3- Add the dissolved yeast, 25 cl of warm milk, and the orange blossom water. Work the mixture with a spatula to form a smooth dough.
4- Place the ball of dough on a floured work surface to knead it for a few minutes, folding it over several times. Work the dough until it no longer sticks to the work surface.
5- Then add the vegetable oil and knead the dough again, folding it over several times. It should become smooth and elastic and should come off the work surface easily.
6- Place the dough in a lightly oiled and floured bowl after forming a nice ball. Cover with plastic wrap and store in the refrigerator overnight. Let it double in size.
The next morning:
1- Knead the dough for a few minutes to degas it.
2- Cut the candied fruit into small cubes and spread them evenly in the dough.
3- Dig a hole in the center of the ball and form a crown with your hands.
4- Insert the beans and bake in a preheated oven, then turn it off. The aim is to make the dough rise again a little.
5- Once the dough has risen, remove it from the oven and preheat it for 10 minutes at 200°C.
6- Brush the dough with milk. Bake the brioche for 25-30 minutes at 200°C.
7- When removed from the oven, brush with agave syrup and jam. Then arrange the pieces of candied fruit and sugar grains.
8- Let cool before serving.
